There is no "new" information, but by using interpolation to find the maximum you are essentially reorganizing the data to make it more convenient. In other words, instead of just taking the maximum pixel value, you are using a neighborhood of pixels to interpolate where the center peak is. This is how a lot of super resolution microscopy techniques work. Look up localization vs resolution.

I am searching for a better way myself, so I don't have a solution to the OP's problem, however this response that "no new data is created" is correct but misleading and off-topic.
